Chickpea bowl of goodness

Its getting colder in Toronto and I’m craving comfort food. I love chickpeas (they’re so versatile and packed with nutrients). I’m very creative in the kitchen and I love to try different food. This chickpea bowl is one of my favourite (easy and delicious!). Many of you asked, so here’s the recipe…Enjoy!
 
  • 1 can of cooked chickpeas
  • chopped chives
  • green onions
  • minced garlic
  • 1 teaspoon vegetable bouillon powder
  • 1 can of coconut milk
  • fresh chopped cilantro
  • 1 tablespoon olive oil
  • 1 tablespoon nutritional yeast
  • 1 teaspoon old bay seasoning
  • 1 tomato cayenne chao slice (optional)
  • 1 chopped jalepeno (optional)
 
In a saucepan, heat the oil (high heat), add the cooked chickpeas, chives, green onions, minced garlic (stirring for two minutes), then add coconut milk, vegetable bouillon powder, tomato cayenne chao slice (optional), jalepeno (optional), old bay seasoning and nutritional yeast. Reduce heat to a simmer and cook for 15 minutes, then garnish with fresh chopped cilantro. Try this chickpea bowl of goodness on its own or serve over rice.

    Building a mailing list like you are is so important too, I think people would really like to be signed up to what you have to share.
