Vegan and gluten-free energy balls.

I felt like having something sweet today. So instead of buying a snack, I decided to make some vegan and gluten-free energy balls. They are so delicious and chewy. This is probably one of the easiest recipe I made thus far. I used a handful of each of the nuts listed below, four large pitted dates, 1 tablespoon of maple syrup and 2 tablespoons of almond butter. You can modify the quantity depending on how many energy balls you need. Ingredients:

  • Macadamia nuts
  • Raw almonds
  • Hazelnuts
  • Walnuts
  • Pitted dates
  • Almond butter
  • Maple syrup
  • Shredded coconut

Add in a food processor to chop and mix all the ingredients. Take a spoonful of the mix and form balls (with your hands). Then sprinkle them with the shredded coconut. Let sit in the fridge for 30 mins and enjoy!
